The business needed
a different direction.
Demand had softened. The task was to stabilize the business and work out what its next version should be—not simply refresh the appearance of the restaurant.
The concept had to be grounded in the current market, with the menu, service and physical environment developed around the same direction. The route to implementation also had to remain workable as circumstances changed.
Research before redesign.
Salvia used extensive market research to develop the new concept. That research informed the menu, the service approach and the direction of the space.
Rather than treating design, marketing and operations as separate assignments, the work brought them into one plan. A change to the concept needed to be reflected in what guests would order, how they would be served and the environment they would enter.
From concept
to coordinated delivery.
Salvia developed a new menu and service direction, revamped the space concept, and worked with interior designers and architects to translate that direction into a physical environment.
Salvia created financial models and financial and investor presentation decks to support the business plan and the proposed implementation routes. The work also covered branding, marketing, POS technology and the website. An alternative implementation route was prepared so the plan could adapt to different funding arrangements.

A developed concept.
A plan to carry it through.
The restaurant now has a researched concept, a new menu and service direction, a developed space concept, and financial models supporting the implementation plan. Financial and investor decks give the proposed work a clear business case.
Salvia continues to work with the design and delivery teams as the project moves through implementation. The engagement brings the commercial plan and the restaurant experience into the same process.
